Split Pea Soup
Split Pea Soup
- 3 tablespoons Olive Oil
- ¾cup Chopped Onion
- 1 ¾ cup Split Green Peas
- 7 ½ cups water
- 2 teaspoons salt
- 3 large potatoes, diced
Heat the oil, saute the chopped onions, cook until onions wilt, add Split Green Peas, water, salt, and potatoes. Bring to a boil, then reduce heat and simmer 45 minutes or until peas are tender. For variation, 1 cup Diced Carrots may be added.
