To prepare dried beans and peas, sort through them, discarding broken or discolored ones. Rinse them thoroughly in cold water. There are three methods that can be used for cooking beans and peas. With each method, use approximately 3 cups of water for every cup of beans or peas unless a specific recipe calls for a different amount.
Method 1. Place beans or peas in water in a large pot and soak, covered, for 6 - 8 hours or overnight. Then proceed as the recipe directs.
Method 2. Place beans or peas and water in a large pot and bring to a boil. Cook covered for 2 minutes. Remove from heat and let stand for 1 hour.
Method 3. Place beans or peas and water in a large pot and bring to a boil. Reduce heat and simmer, stirring occasionally until they are tender.
