Oat Bran Muffins
Oat Bran Muffins
- 2 cups Oat Bran
- ¼ cup Whole Wheat Pastry Flour
- 1 tablespoon baking powder
- ½ teaspoon Sea Salt
- ⅓ cup Walnuts
- ½ cup Coconut
- ½ teaspoon ginger powder
- ¼ teaspoon nutmeg
- ¼ cup Raisins
- ½ cup barley malt
- 2 tablespoons safflower oil
- ½ teaspoon vanilla extract
- ⅔ to 1 cup water
Place all dry ingredients plus Raisins in a bowl and mix well. In a separate bowl, mix together all liquid ingredients, using the least amount of water. Stir liquid into dry ingredients. Add more of the remaining water (up to 1 cup total) to make a thick batter. Spoon into oiled muffin pans and bake at 350 degrees for 12 - 15 minutes.
