Fig Bars
- 2 cups chopped, Dried Black Mission Figs and/ or Dried Turkish Figs
- ¾ cup water
- ⅓ cup Honey
- 4 tablespoons lemon juice
- ½ cup Unsweetened Dried Coconut
- 1½ cup Whole Wheat Flour
- 1½ cup Rolled Oats
- ½ teaspoon Sea Salt
- ¼ cup soft butter
- ¼ cup Honey
- 1 teaspoon vanilla
Put Figs, water, ⅓ cup Honey, 3 tablespoons of the lemon juice, and ¼ cup of the Coconut in a small saucepan, and cook over low heat until thick. Meanwhile, mix together the Flour, Oats, ¼ cup of the Coconut, and Sea Salt. Cut in the butter, and add the Honey, vanilla, and 1 tablespoon of the lemon juice, mixing well. Press half the flour mixture into a buttered nine inch square baking pan. Cover with the Fig mixture, then put the rest of the Flour mixture on top. Bake in a pre-heated oven at 350 degrees for 35 minutes or until golden brown. Allow to cook and cut into squares. Makes 16 square bars.
