Easy Split Pea Soup
  • 1 cup Green Split Peas
  • 1 cup Chopped Onion
  • 1 cup chopped celery, including some leaves
  • 6 cups water or vegetable cooking water
  • 2 teaspoons vegetable salt
  • Dash of pepper

Put all ingredients into a two-quart saucepan. Bring to a boil; reduce heat and simmer, covered, for about one and a half hours or until peas fall apart. Stir occasionally. Serve hot.
