- 2 tablespoons butter or margarine
- 1 cup uncooked Millet, rinsed
- ¾ teaspoon salt
- ¼ teaspoon pepper
- 2½ cups water
Melt butter or margarine in a skillet; add millet and stir-fry for 3 minutes. Stir in remaining ingredients and bring to a boil; cover and cook over medium-low heat for 30 minutes. Turn off the heat and let stand for 25 minutes. Fluff with a fork and serve. Even without embellishments, Millet is a tasty side dish for seafood, chicken, and vegetarian entrees.
