Baked Breakfast Rice

Baked Breakfast Rice
  • 2 cups cooked Brown Rice
  • 1½ cups low-fat milk
  • ¼ teaspoon Sea Salt
  • ½ to 1 cup toasted Pecan pieces
  • Ground cinnamon

In a medium-size mixing bowl, blend all the ingredients together except the cinnamon. Turn into a greased eight-inch square baking pan or casserole, spreading evenly. Sprinkle lightly with cinnamon. Bake at 350 degrees for about 40 minutes, or until set. Serve hot. Makes four servings.

Note: For a sweet dish, drizzle a little Honey, Maple Syrup, or molasses over each serving. A little milk may also be poured on if desired.
